  • 1 cup flour
  • 2 eggs
  • 2 cups panko breadcrumbs
  • 1/4 cup neutral oil (vegetable or olive oil)
  • 1 large head romaine lettuce, chopped
  • 1 cup croutons
  • 1/2 cup Caesar dressing
  • 4 extra-large burrito wraps

Instructions

  1. Slice chicken breasts in half widthwise and pound to about 1/4 inch thick.
  2. Set up a breading station with flour mixed with salt and pepper, whisked eggs, and panko breadcrumbs mixed with grated parmesan.
  3. Coat each chicken piece with flour, dip in egg, then coat with breadcrumbs.
  4. Heat oil in a large pan over medium-high heat. Cook chicken pieces for 4-5 minutes on each side until golden brown. Drain on paper towels.
  5. In a bowl, mix romaine lettuce, croutons, shredded parmesan, and Caesar dressing.
  6. Slice cooked chicken and toss it with the salad mixture. Fill each burrito wrap with the mixture and roll tightly.
