  • 1 small yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh ginger (minced)
  • 1 cup low-sodium chicken broth
  • 3/4 cup diced tomatoes
  • 1 1/2 lbs boneless skinless chicken breasts (diced)

  • Salt and cayenne pepper (to taste)
  • Chopped cilantro (for garnish)

  6. Season with salt and cayenne pepper; add diced chicken, simmering until cooked through (8-12 minutes).

  8. Finish with heavy cream and garnish with cilantro before serving over rice or naan.
