  • 1 tablespoon vegetable oil
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 can store-bought red enchilada sauce (10 oz)
  • Chopped cilantro (for garnish)
  • Sour cream (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté chopped onion and minced garlic in vegetable oil until soft.
  3. Mix in shredded chicken with cumin, chili powder, salt, and pepper; heat through.
  4. Pour some enchilada sauce into a baking dish.
  5. Fill tortillas with chicken mixture and cheese; roll tightly and place seam-side down in the dish.
  6. Cover with remaining enchilada sauce and sprinkle more cheese on top.
  7. Bake covered for 20-25 minutes; uncover and bake an additional 5-10 minutes until golden.
