  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons Italian seasoning
  • ½ cup flour
  • ¼ cup Parmesan cheese (finely shredded)
  • 1 teaspoon garlic powder
  • 4 cloves garlic (minced)
  • 1 ½ cups white wine (or chicken broth)
  • 1 cup half and half
  • 1/3 cup softened cream cheese
  • 3 cups fresh spinach
  • ½ fresh lemon or 1.5 tablespoons lemon juice (optional)
  • Fresh parsley (to garnish)

Instructions

  1. Pound chicken breasts to about ½ inch thick and season with salt, pepper, and Italian seasoning.
  2. Dredge in a mixture of flour, Parmesan cheese, and garlic powder.
  3. Heat olive oil and butter in a skillet over medium-high heat; sear chicken for 4-5 minutes on each side until golden brown.
  4. Remove chicken; deglaze skillet with white wine or broth, reducing by half before adding minced garlic.
  5. Stir in half and half and cream cheese until smooth; then add fresh spinach until wilted.
  6. Return the chicken to the skillet to heat through, adding lemon juice if desired. Garnish with parsley before serving.
