  • 12 oz pasta (fettuccine or penne)
  • 1 lb boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup Marsala wine or chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Olive oil, salt, pepper, dried thyme

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Season chicken with salt and pepper; sauté until browned (5–7 minutes). Remove and set aside.
  3. In the same skillet, sauté mushrooms until tender (4–5 minutes). Add garlic; cook until fragrant.
  4. Pour in broth and Marsala wine; simmer. Stir in cream, Parmesan, and thyme.
  5. Return chicken to skillet; add pasta and toss until coated in sauce. Simmer for an extra minute.
