  • 1 pound boneless, skinless chicken (thighs or breasts)
  • 1 cup pineapple chunks
  • 1 bell pepper (any color)
  • 1 cup broccoli florets
  • Teriyaki sauce (soy sauce, honey, rice vinegar, ginger, garlic)

Instructions

  1. Prepare the teriyaki sauce by combining soy sauce, honey, rice vinegar, minced ginger and garlic in a small saucepan. Mix cornstarch with water until smooth and add it to the saucepan. Simmer until thickened.
  2. In a skillet or wok over medium-high heat, heat vegetable oil and cook chicken until browned. Add sliced bell pepper and broccoli; stir-fry until tender-crisp.
  3. Mix in pineapple chunks and teriyaki sauce; cook for an additional few minutes.
  4. Serve over cooked rice in hollowed pineapple bowls and garnish with sliced green onions and sesame seeds.
