  • 1/2 cup light brown sugar (packed)
  • 1/8 cup granulated sugar (for filling)
  • 1 large egg (for filling, room temperature)
  • 1 teaspoon vanilla extract (for filling)
  • 1 1/4 cups all-purpose flour (for filling)
  • 1/2 teaspoon fine sea salt (for filling)
  • 1/4 teaspoon baking powder (for filling)
  • 1/2 cup semi-sweet chocolate chips (for filling)
  • 4 tablespoons unsalted butter (for glaze, room temperature)
  • 1 ounce cream cheese (for glaze, cold)
  • 1 cup powdered sugar (for glaze)
  • 3 tablespoons heavy cream (for glaze)
  • 1 teaspoon vanilla paste or extract (for glaze)

Instructions

  1. Prepare the tangzhong by cooking 1/4 cup flour with 3/4 cup water in a saucepan until thickened. Let cool.
  2. In a large bowl, mix yeast, sugar, and warm milk. Allow to froth.
  3. Incorporate cooled tangzhong, egg, vanilla, salt, and softened butter into the yeast mixture.
  4. Gradually add flour until a soft dough forms. Knead gently until smooth.
  5. Allow dough to rise in a greased bowl for about 60-90 minutes until doubled in size.
  6. For filling, mix butter with sugars and add egg and vanilla; fold in flour, salt, baking powder, and chocolate chips.
  7. Roll out risen dough into a rectangle, spread filling evenly, roll tightly, and cut into slices.
  8. Place slices cut-side up in a greased dish and let rise for another 30-45 minutes.
  9. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  10. For the glaze, combine softened butter with cream cheese, powdered sugar, heavy cream, and vanilla; drizzle over warm rolls.
