  • 235 g chocolate chips

  2. Make the Dough: Combine levain with remaining water, salt, and gradually add bread flour; knead until smooth.
  3. Incorporate Butter: Flatten dough into a rectangle, spread softened butter on two-thirds, fold to create layers.
  4. Add Chocolate Chips: Roll out again, sprinkle chocolate chips on two-thirds, fold to seal in chocolate.
  5. Shape & Proof: Form into a loaf; place in a greased pan and let rise until doubled.
