  • 7 g dry baker’s yeast
  • 430 g all-purpose flour
  • 60 g granulated sugar
  • 1 pinch of salt
  • 1 egg (room temperature)
  • 70 g melted butter (cooled)
  • 50 g unsweetened cocoa powder
  • 120 g brown sugar
  • 2 tsp ground cinnamon
  • 70 g softened butter
  • 1 tsp vanilla extract
  • 70 g powdered sugar
  • 60 ml heavy cream

Instructions

  1. Mix lukewarm milk and yeast in a bowl; let sit for 5–10 minutes until frothy.
  2. In a stand mixer, combine flour, sugar, cocoa powder, and salt. Mix well.
  3. Add egg, melted butter, and activated yeast mixture; knead on medium speed for about three minutes until smooth.
  4. Cover dough and let rise in a warm place for 1.5 to 2 hours until doubled in size.
  5. Prepare the filling by mixing brown sugar, cocoa powder, cinnamon, and vanilla in a bowl.
  6. Roll out dough into a rectangle and spread with softened butter; sprinkle with filling mixture.
  7. Roll tightly into a log; slice into 9–11 equal pieces.
  8. Place rolls in a baking dish and let rise again for 30–60 minutes.
  9. Preheat oven to 350°F (180°C) and bake for 20–25 minutes until golden brown.
  10. Cool slightly before glazing with a mixture of powdered sugar, cocoa powder, and heavy cream.
