  • 1 cup all-purpose flour
  • 1/2 cup butter, at room temperature
  • 1 1/2 cups finely chopped pecans, divided
  • 8 oz cream cheese, at room temperature
  • 1 cup powdered sugar
  • 2 tubs (8 oz each) Cool Whip, thawed
  • 2 small boxes instant chocolate pudding
  • 3 cups milk

Instructions

  1. Preheat the oven to 325°F. In a mixing bowl, combine flour, butter, 1 cup of chopped pecans, and salt until just mixed. Press into the bottom of a 13×9 baking dish and bake for 25-30 minutes until golden. Allow to cool.
  2. In another bowl, blend cream cheese and powdered sugar until smooth. Fold in half of the Cool Whip and spread over the cooled crust.
  3. In a separate bowl, mix chocolate pudding with milk for about two minutes until thickened. Spread over the cream cheese layer.
  4. Top with remaining Cool Whip and sprinkle with chopped pecans. Refrigerate for at least two hours before serving.
