  • 1/2 cup unsalted butter (softened, for frosting)
  • 23 cups powdered sugar
  • 1/21 teaspoon peppermint extract
  • 34 drops red food coloring (optional)
  • 12 tablespoons cream (or milk)
  • 1/4 cup crushed candy canes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, brown sugar, and white sugar until light and fluffy. Mix in melted chocolate and vanilla, then beat in the egg.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add this mixture to the wet ingredients and fold in chocolate chips.
  4. Scoop tablespoon-sized portions onto prepared baking sheets about 2 inches apart. Bake for 10 minutes until edges are set but centers remain soft.
  5. Cool briefly on baking sheets before transferring to a cooling rack.
  6. For the frosting, beat butter until creamy; gradually mix in powdered sugar and peppermint extract until smooth.
  7. Assemble cookies by spreading frosting on one cookie's flat side and topping with another.
