  • 350 g warm water (85℉)
  • 100 g active sourdough starter
  • 25 g granulated sugar
  • 500 g unbleached all-purpose flour
  • 11 g kosher salt
  • 2 tablespoons ground cinnamon
  • 135 g dark brown sugar

Instructions

  1. In a mixing bowl, combine warm water and active sourdough starter; whisk until dissolved.
  2. Add granulated sugar and incorporate thoroughly.
  3. Mix in flour until too thick to stir; use hands to bring dough together.
  4. Sprinkle salt over dough and let rest for 30 minutes; then pinch salt into dough.
  5. Repeat resting and stretching for a total of three times over two hours.
  6. Shape dough into a rectangle, layer with cinnamon and brown sugar, fold and roll into a boule.
  7. Proof in a lined basket for 2-3 hours in the fridge.
  8. Preheat your Dutch oven to 450℉; bake covered for 25 minutes, then uncovered for an additional 18-20 minutes.
