  • 500 grams (3 ½ cups) bread flour
  • 350 grams (1 ½ cups) water
  • 50 grams (¼ cup) active sourdough starter
  • 50 grams (¼ cup) sugar
  • 10 grams (1 ½ teaspoons) salt
  • 114 grams (1 stick) butter
  • 15 grams (1 tablespoon) honey
  • 30 grams (¼ cup) powdered sugar
  • 2 grams (1 teaspoon) cinnamon

Instructions

  1. Mix together flour, water, sourdough starter, sugar, and salt until a shaggy dough forms. Cover and let sit at room temperature.
  2. After 30 minutes, perform a stretch and fold on the dough. Repeat this step one or two more times every 30 minutes.
  3. Allow the dough to undergo bulk fermentation at room temperature for 10-14 hours until it has risen by about 75%.
  4. Prepare the cinnamon honey butter by mixing butter, honey, powdered sugar, cinnamon, and flour.
  5. Shape the dough into a rectangle; spread half of the cinnamon honey butter on top and fold into thirds. Add remaining butter on top, roll tightly, and place in a proofing basket.
  6. Refrigerate for at least 8 hours for the second proof.
  7. Preheat your oven and Dutch oven to 450°F.
  8. Score the dough and bake covered for about 25 minutes; then uncover and bake for another 10-15 minutes until golden brown.
  9. Cool completely before slicing.
