  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • Fresh thyme
  • Bay leaves
  • Frozen pearl onions
  • Cremini mushrooms

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven, cook the bacon until browned; set aside.
  3. Sear seasoned beef in the same pot until browned on all sides.
  4. Sauté onions and carrots, then add garlic and tomato paste.
  5. Deglaze with apple vinegar, then add beef stock and herbs; return beef and bacon to pot.
  6. Cover tightly and bake for 2 ½ hours.
  7. Sauté mushrooms and pearl onions in remaining butter; add to stew.
  8. Bake for another 45-60 minutes until beef is fork-tender.
