  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1/2 cup coconut milk (for rice)
  • 1/2 teaspoon salt
  • Zest of 1 lime
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro (chopped for garnish)

Instructions

  1. 1. Marinate the chicken: In a bowl, mix coconut milk, lime juice, lime zest, garlic, soy sauce, honey, cumin, coriander, salt, and pepper. Coat the chicken in the marinade and refrigerate for at least 30 minutes.
  2. 2. Cook the rice: Rinse basmati rice until clear. In a saucepan, combine rinsed rice with water, coconut milk, and salt. Bring to boil then lower heat to simmer for about 15-20 minutes. Fluff with lime zest and juice.
