  • 3 lbs yellow onions
  • 1 cup apple vinegar or extra beef stock
  • 2 1/2 cups beef stock
  • 1 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp all-purpose flour or gluten-free all-purpose flour
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 sprig rosemary
  • 1 bay leaf

Instructions

  1. Season the chuck roast generously with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat and sear the roast on all sides until browned.
  3. Thinly slice the yellow onions and sauté them in the same skillet until golden brown.
  4. Add minced garlic, maple syrup (or brown sugar), and flour to the onions; cook for another minute.
  5. Transfer the onion mixture to a slow cooker, adding apple vinegar (or beef stock), beef stock, rosemary sprig, bay leaf, and seasonings.
  6. Place the seared chuck roast on top and cover. Cook on low for 6-8 hours or high for 4-5 hours until fork-tender.
  7. Remove bay leaf and rosemary before serving; slice or shred as desired.
