  • 2 medium zucchinis, sliced
  • 1 cup spinach, chopped
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Toss the sliced zucchinis, diced bell pepper, and halved cherry tomatoes in olive oil, salt, pepper, and oregano. Roast on a baking sheet for about 15 minutes until tender.
  2. In a mixing bowl, combine cottage cheese, eggs, and half of the shredded mozzarella.
  3. In a greased baking dish, layer the roasted veggies followed by the cottage cheese mixture. Top with remaining mozzarella and grated Parmesan.
  4. Bake for 30-35 minutes until golden brown on top.
  5. Let rest for 10 minutes before serving; garnish with fresh herbs.
