- 16 oz medium portobello mushrooms
- 1 tbsp olive oil
- 1/2 cup finely chopped onion
- diced mushroom stems
- 2 garlic cloves
- 4 oz claw or lump crab meat
- 4 oz cream cheese (softened)
- 1 egg
- 1/4 cup bread crumbs
- 1/2 cup freshly grated Parmesan cheese
- 1 tbsp minced fresh parsley
- 1 tbsp minced chives
- Salt and black pepper to taste
- 1/4 cup fresh grated Parmesan cheese
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms, remove the stems, and chop them finely.
- Sauté chopped onion and mushroom stems in olive oil until caramelized; add garlic until fragrant.
- In a bowl, combine crab meat, sautéed vegetables, cream cheese, egg, bread crumbs, Parmesan cheese, parsley, chives, salt, and pepper.
- Fill each mushroom cap generously with the stuffing mixture and top with additional Parmesan cheese.
- Bake for 20 minutes or until golden brown.
