  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Poke each potato with a fork and microwave in a bowl for 8 minutes total (4 minutes per side) until tender.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Toss the microwaved potatoes in olive oil, salt, and pepper until well-coated.
  4. Smash each potato to about 3/8" thick and arrange them on the baking sheet.
  5. Roast in the oven for 12 minutes total (6 minutes per side) until golden brown and crispy.
  6. Garnish with chopped parsley before serving.
