  • 3 (15 oz) cans of white beans (cannellini or great northern), drained and rinsed
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • ½ cup heavy cream (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, carrots, and celery until softened (about 5 minutes).
  2. Add sliced turkey or chicken sausage; cook until browned.
  3. Stir in minced garlic, smoked paprika, and dried thyme; sauté for another minute.
  4. Pour in chicken broth and add drained white beans along with a bay leaf. Bring to a simmer for about 20 minutes.
  5. If desired, stir in heavy cream before serving. Season with salt and pepper.
  6. Serve warm, garnished with fresh parsley.
