  • 3 celery stalks, chopped
  • 1 onion, diced
  • 810 cups low sodium chicken broth
  • 1 cup uncooked wild rice (rinsed)
  • 4 garlic cloves
  • 1 bay leaf
  • 1 Tbsp Italian Seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • ½ tsp sea salt
  • ½ tsp cracked pepper
  • ¼ cup flour (gluten free will work as well)
  • ½ cup half-and-half
  • ½ cup whole milk

Instructions

  1. Prepare the vegetables: Dice onion, chop carrots and celery, and mince garlic.
  2. Layer ingredients in the slow cooker: Place chicken at the bottom, then add garlic, seasonings, onion, carrots, and celery.
  3. Add broth and rice: Pour in broth and add rinsed wild rice along with a bay leaf.
  4. Cook: Cover and cook on low for 6-8 hours.
  5. Shred chicken: Once cooked through (internal temp of 165°F), shred chicken and return to the pot.
  6. Stir in creaminess: Whisk flour with half-and-half and milk; slowly pour into the soup while stirring.
