Ingredients

  • 2 cups thinly sliced mini cucumbers (~1/8" thick)
  • 1 1/2 cups English peas (we use frozen)
  • 1 1/2 cups thinly sliced sugar snap peas
  • 1 cup thinly sliced radishes (1/16" thick)
  • 1/2 cup crumbled feta cheese, plus more to taste
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh chives
  • 1 garlic clove, grated
  • 1 tablespoon freshly squeezed lemon juice
  • Salt & pepper to taste

Instructions

  1. If using frozen peas, cook them according to package directions and rinse under cold water to cool.
  2. In a mixing bowl, whisk together Greek yogurt, mayonnaise, dill, chives, garlic, lemon juice, salt, and pepper until smooth.
  3. In a large salad bowl, combine cucumbers, peas, sugar snap peas, radishes, and feta cheese.
  4. Pour the dressing over the salad and toss gently to combine. Serve immediately.
