  • 2x 9oz/250g Chicken Breasts
  • 1/4 cup / 40g Flour
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1 tbsp Olive Oil
  • 1 tbsp Butter (preferably unsalted)
  • 9oz / 250g Baby Button Mushrooms (sliced fairly thin)
  • 3/4 cup / 180ml Heavy/Double Cream (at room temp)
  • 3/4 cup / 180ml Chicken Stock
  • 1oz / 1/3cup / 30g freshly grated Parmesan
  • 2 large cloves of Garlic (finely diced)
  • 1 tbsp finely diced Fresh Parsley (plus more to garnish if desired)
  • 1 tbsp finely diced Fresh Chives
  • 1/21 tsp Lemon Juice
  • Salt & Pepper (to taste)

Instructions

  1. Slice each chicken breast horizontally into four pieces for even cooking.
  2. Combine flour, garlic powder, salt, and black pepper in a shallow dish. Dredge chicken pieces in the mixture.
  3. Heat olive oil and butter in a pan over medium-high heat; cook chicken until golden brown on both sides. Remove and set aside.
  4. In the same pan, melt more butter and add sliced mushrooms; cook until golden. Add garlic and sauté briefly.
  5. Pour in chicken stock and cream; stir in chives and parsley, letting it simmer until slightly thickened.
  6. Mix in grated Parmesan cheese and lemon juice; season with salt and pepper.
  7. Return chicken to the pan to coat with sauce before serving.
