  • ½ cup breadcrumbs
  • 1 egg
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup small pasta (such as ditalini or orzo)
  • 1 cup spinach or kale, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix ground beef (or turkey), breadcrumbs, egg, Parmesan cheese, garlic, Italian seasoning, salt, and pepper until well combined. Shape into small meatballs.
  2. Heat olive oil in a large pot over medium heat and brown the meatballs for about 5-7 minutes.
  3. Remove meatballs and sauté onions, carrots, celery, and garlic in the same pot for about 5 minutes.
  4. Pour in broth and return meatballs to the pot along with pasta; cook until everything is tender (about 15 minutes).
  5. Stir in heavy cream and chopped greens; season with basil and oregano. Simmer for a few more minutes until greens wilt.
  6. Serve hot, garnished with fresh parsley and grated Parmesan if desired.
