  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 23 fresh jalapeños, diced

Instructions

  1. Season chicken breasts with salt. Heat olive oil in a large pot over medium heat and cook chicken until no longer pink (about 5-7 minutes per side). Remove from pot.
  2. In the same pot, sauté diced onion and minced garlic until soft.
  3. Add ground cumin and chili powder; cook for about 1 minute to release flavors.
  4. Return chicken to the pot along with white beans and chicken broth. Bring to a gentle simmer.
  5. After about 15 minutes of simmering, stir in heavy cream and jalapeños; cook for another 5 minutes.
  6. Serve hot topped with optional cilantro, sour cream, or shredded cheese.
