  • 1 small red onion
  • 6 cloves garlic
  • 2 tsp fennel seeds
  • 1 tbsp Italian seasoning
  • 1/2 cup sundried tomatoes
  • 3 cups vegetable stock
  • 3/4 cup heavy cream
  • 1 cup Parmesan cheese

Instructions

  1. Cook the lentils until tender (approximately 20 minutes on stovetop).
  2. In a sauté pan, heat oil from sundried tomatoes and sauté diced onion until soft.
  3. Add crushed garlic and fennel seeds; sauté until fragrant.
  4. Mix in tomato paste and chopped sundried tomatoes; combine well.
  5. Drain cooked lentils and rinse under cold water.
  6. Add lentils to the pan with vegetable stock; simmer for about 10 minutes.
  7. Stir in cream and cheese; cook on low heat until melted and creamy.
  8. Serve warm with lemon wedges for added zest.
