  • Oil from sundried tomatoes
  • 1 cup dry black, brown, or green lentils
  • 1 small red onion
  • 6 cloves garlic
  • 2 tsp fennel seeds
  • 1 tbsp Italian seasoning
  • 3 tbsp tomato paste
  • ½ cup sundried tomatoes
  • 2 cups vegetable stock
  • ¾ cup heavy cream
  • 1 cup grated cheese (Parmesan or Pecorino)
  • Fresh basil

Instructions

  1. Cook lentils: For dry lentils, simmer in salted water until tender (20 minutes). If using canned, rinse and drain.
  2. Sauté aromatics: In a large sauté pan, heat oil from sundried tomatoes. Sauté diced onions until soft; add garlic and sauté until fragrant.
  3. Add spices: Stir in fennel seeds, smoked paprika, and Italian seasoning.
  4. Mix in tomato paste and sundried tomatoes; combine well.
  5. Add cooked lentils to the pan with sautéed mixture; stir to combine.
  6. Pour in vegetable stock and simmer for about 10 minutes.
  7. Finish with heavy cream, cheese, and fresh basil; stir gently until melted through.
