  • 1.5 lb cremini mushrooms
  • 1 onion
  • 3 garlic cloves
  • 1/2 cup dry white wine
  • 1.5 cups mushroom broth
  • 2 tbsp all-purpose flour
  • 2 or 3 sprigs fresh thyme
  • 2 tsp dijon mustard
  • 1 tsp smoked paprika
  • 1/2 cup sour cream or plain Greek yogurt
  • sea salt
  • black pepper
  • 1 tbsp butter

Instructions

  1. Cook egg noodles in salted boiling water until al dente, then drain and toss with butter.
  2. In a skillet, melt butter and sauté onions until translucent; add garlic and cook briefly.
