  • 15.87 oz Mascarpone cheese
  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cup Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso, or strong coffee)

Instructions

  1. Brew espresso or strong coffee and let it cool.
  2. In a bowl, mix mascarpone cheese with brown sugar, granulated sugar, kosher salt, and pumpkin pie spice until smooth.
  3. Add pumpkin puree and blend until combined.
  4. Whip cold heavy cream separately until thickened, then fold into the mascarpone mixture.
  5. Dip ladyfingers briefly in cooled coffee and layer them in a dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat with another layer of dipped ladyfingers followed by more filling.
  8. Chill in the fridge for at least 4 hours before serving.
