  • 2 cups vegetable broth
  • 1.5 cups milk (whole or 2%)
  • 1 teaspoon Dijon mustard
  • 8 ounces sharp cheddar cheese (freshly grated)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Add broccoli florets in the last few minutes of cooking.
  2. Reserve about one cup of pasta water before draining.
  3. In a skillet, melt unsalted butter and sauté the onion until softened. Add minced garlic and cook briefly.
  4. Whisk in flour to create a roux, cooking for about two minutes.
  5. Gradually add vegetable broth followed by milk, stirring until smooth and thickened.
  6. Stir in Dijon mustard and season with salt and pepper.
  7. Slowly incorporate grated cheddar until melted and smooth.
  8. Add cooked pasta and broccoli to the sauce, mixing well. Adjust consistency if needed with reserved pasta water.
