  • 1 lb fresh skinless salmon fillets, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha, adjust to taste
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. Pat the salmon cubes dry with paper towels.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat each salmon cube in flour, dip in eggs, then roll in the panko mixture.
  4. Heat vegetable oil in a frying pan over medium heat until hot (around 350°F).
  5. Fry the salmon bites in batches for about 2-3 minutes per side until golden brown and crispy.
  6. For the bang bang sauce, mix mayo, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  7. Serve immediately with the bang bang sauce drizzled on top or on the side.
