Crispy Blueberry Grilled Cheese is a deliciously innovative take on the classic grilled cheese sandwich, merging savory and sweet elements in every bite.

  • 1 pint fresh blueberries
  • 1/4 cup white sugar
  • Juice of 1 lemon
  • 8 slices sourdough bread (1/4 inch thick)
  • 4 oz white cheddar cheese (grated)
  • 4 oz whole mozzarella cheese (shredded)
  • 4 tbsp butter
  • Flaky sea salt (for finishing)

Instructions

  1. In a mixing bowl, combine blueberries, sugar, and lemon juice. Let sit for 5 minutes.
  2. Spread butter on one side of each slice of sourdough bread. On the non-buttered side of half the slices, layer grated cheddar and mozzarella cheese, then add a generous spoonful of the blueberry mixture.
  3. Top each open-faced sandwich with another slice of bread (buttered side out). Heat a skillet over medium heat and cook sandwiches until golden brown on both sides and cheese is melted (about 3-4 minutes per side).
  4. Remove from skillet, sprinkle with flaky sea salt, cut in half, and serve warm.
