  • 3 cups shredded rotisserie chicken
  • 1½ cups mozzarella cheese (shredded)
  • 1½ cups parmesan cheese (shredded)
  • 1 (32 oz) container ricotta cheese
  • 2 jars (15 oz each) alfredo sauce
  • 12 oz oven-ready lasagna noodles
  • 2½ cups baby spinach (coarsely chopped)

Instructions

  1. Spray a 6-quart crock pot with nonstick cooking spray.
  2. In a mixing bowl, combine mozzarella, parmesan, ricotta, garlic, salt, pepper, Italian seasoning, and eggs until well mixed.
  3. Pour ¾ cup alfredo sauce on the bottom of the crock pot. Layer five lasagna noodles over the sauce.
  4. Spread half of the remaining alfredo sauce over the noodles followed by half of the cheese filling, then add shredded chicken and chopped spinach.
  5. Repeat layering with another five noodles, remaining sauce, cheese filling, chicken, and spinach.
  6. Add any leftover noodles on top and cover with reserved alfredo sauce.
  7. Cook on low for about 4 hours until heated through.
  8. Before serving, sprinkle remaining mozzarella on top and let it sit covered for 10-15 minutes to melt.
