  • 2 slices bacon
  • 1 large yellow onion
  • 1 cup carrots
  • ¾ cup celery
  • 4 cups low sodium chicken broth
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans
  • 1 (16 oz) box ditalini pasta
  • Seasonings: salt, pepper, garlic, thyme, basil, parsley

Instructions

  1. In a large skillet, cook the bacon until crispy. Drain and add to the slow cooker.
  2. Add diced onion, sliced carrots, diced celery, salt, pepper, minced garlic, herbs, tomato paste, crushed tomatoes, rinsed beans, chicken broth, and water to the slow cooker. Stir well.
  3. Cook on low for 7-8 hours or high for 4-5 hours.
  4. About 30 minutes before serving, stir in the uncooked ditalini pasta.
  5. Serve hot with freshly grated Parmesan cheese.
