Ingredients

Scale
  • 3 lbs Bone-In Beef Short Ribs
  • 3 Cups Baby Carrots
  • 2 Cups Mushrooms (Sliced)
  • 2 Cups Beef Broth
  • 1 Cup Apple Vinegar (Optional)
  • 2 Tbsp Tomato Paste
  • 3 Tbsp Unsalted Butter
  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 Tbsp Garlic (Minced)
  • Salt (To Taste)
  • Pepper (To Taste)

Instructions

  1. Season beef short ribs with salt and pepper. In a large skillet over medium heat, sear each rib on all sides until browned (about 20 seconds per side) to lock in flavor.
  2. Transfer the short ribs to the crockpot along with baby carrots, mushrooms, beef broth, apple vinegar (if using), tomato paste, butter, bay leaf, thyme, garlic, salt, and pepper. Stir gently to combine.
  3. Cook on low for about 8 hours until the beef is tender and falls off the bone.
  4. Carefully remove the short ribs and vegetables from the crockpot; discard herbs but keep the cooking liquid for a delicious sauce.
  5. Serve warm over your choice of sides like mashed sweet potatoes or salad.
