  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup caper berries
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • Fresh parsley, chopped (for garnish)
  • 2 tbsp butter

Instructions

  1. Mince the garlic and squeeze the lemons.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then sear until golden brown on both sides.
  3. Place seared chicken in the crockpot, adding garlic and capers on top. Pour in chicken broth and lemon juice.
  4. Sprinkle Italian seasoning over everything, cover, and cook on low for 6 hours or high for 3 hours.
  5. Once cooked, remove chicken and whisk butter into the sauce left in the crockpot.
  6. Serve over pasta or rice, garnished with fresh parsley.
