  • 2 & 1/3 cups flour

  • 1 tsp baking powder
  • 1/2 package instant vanilla pudding mix (Half of 3.4 oz)
  • 1/2 cup milk
  • 1/2 tsp vanilla extract (optional)
  • 4 oz cool whip
  • 1 medium banana (slightly ripe, chopped)
  • Nilla wafers (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Mix in the egg and butter vanilla emulsion until well combined.
  4. In another bowl, whisk together flour, salt, and baking powder; gradually add to the wet mixture until just combined.
  5. Scoop tablespoons of dough onto a parchment-lined baking sheet and bake for 8 minutes or until edges are lightly golden. Cool completely on a wire rack.
  6. For the topping, mix instant pudding with milk until thickened; fold in cool whip gently.
  7. Once cookies are cooled, top each with pudding mixture, chopped bananas, and Nilla wafers.
