  • 2 pounds flank steak
  • 3 tablespoons olive oil
  • 1 large onion, sliced
  • 3 bell peppers (red, green, yellow), sliced
  • 6 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 cup white grape juice
  • 1 cup chicken broth
  • 1 can crushed tomatoes (14 oz)
  • Pimento-stuffed Manzanilla olives

Instructions

  1. Season the flank steak with salt and black pepper. Heat 2 tablespoons of olive oil in a large pot over medium-high heat and sear the steak until browned on all sides. Remove from pot.
  2. In the same pot, add another tablespoon of oil if necessary, then sauté onions and bell peppers until soft.
  3. Stir in garlic, tomato paste, oregano, cumin, white grape juice, chicken broth, crushed tomatoes, and bay leaves. Mix well.
  4. Return the flank steak to the pot, cover, and simmer on low heat for about 80 minutes until fork-tender.
  5. After cooking, shred the beef with two forks and stir in olives before serving.
