  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice and zest, dill, mustard, garlic, salt, and pepper to create the dressing.
  2. Boil water in a large pot and cook shrimp for 2–3 minutes until pink; do not overcook.
  3. Prepare an ice bath in a bowl with ice water. After cooking, transfer shrimp into the ice bath for about 3 minutes to cool.
  4. Chop cooled shrimp into bite-sized pieces. In a large bowl, mix shrimp with diced cucumber, green onions, and dressing until well combined.
