  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Kosher salt to taste

Instructions

  1. To prepare the dressing, combine mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, minced garlic, and kosher salt in a bowl. Mix well and set aside.
  2. In a large pot, bring water to a boil. Add the shrimp and cook for 2-3 minutes until pink and cooked through.
  3. Prepare an ice water bath while the shrimp cooks. After cooking, transfer the shrimp to the ice bath for about 3 minutes to cool.
  4. Chop cooled shrimp into bite-sized pieces. In a mixing bowl, combine shrimp with diced cucumber, sliced green onions, and the dressing. Gently stir until evenly coated.
