  • 67 medium Yukon gold potatoes, thinly sliced
  • ½ white or yellow onion, sliced
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup Gruyere cheese (or more sharp cheddar)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Layer the sliced potatoes and onion in a greased baking dish.
  3. In a saucepan over medium heat, melt the butter. Whisk in flour, then gradually add almond milk until smooth.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper; adjust seasoning to taste.
  5. Pour the cheese sauce over the potato layers.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil; sprinkle with Gruyere and Parmesan cheese. Bake uncovered for another 30-45 minutes until golden brown.
