  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Prepare the chicken by boiling or baking until fully cooked, then shred.
  2. In a skillet over medium heat, add vegetable oil and sauté chopped onion and minced garlic until soft.
  3. Stir in shredded chicken along with cumin, chili powder, salt, and pepper; cook for an additional few minutes.
  4. Pour some enchilada sauce into a baking dish to prevent sticking.
  5. Fill each tortilla with the chicken mixture and shredded cheese; roll tightly and place seam-side down in the dish.
  6. Top with remaining enchilada sauce and cheese before covering the dish with foil.
  7. Bake at 375°F (190°C) for 20-25 minutes; remove foil and bake another 5-10 minutes until cheese is bubbly.
