  • 1 ¼ cups warm water (105°F–110°F)
  • 1 tbsp sugar
  • 1 ½ tsp salt
  • 2 tbsp olive oil (plus more for brushing)
  • 1 tbsp Italian herb blend
  • 3 cloves garlic, minced
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast; let sit until foamy (5–7 minutes).
  2. Stir in olive oil, salt, and half the flour; mix well.
  3. Gradually add the remaining flour until a soft dough forms.
  4. Knead on a floured surface for 8–10 minutes until smooth and elastic.
  5. Place in a greased bowl, cover with a kitchen towel, and let rise in a warm place until doubled (about 1–1½ hours).
  6. Punch down the dough; shape into a rectangle and sprinkle with minced garlic and cheeses.
  7. Roll up jelly-roll style; place seam-side down in a greased loaf pan.
  8. Cover and let rise again for 30–40 minutes until puffy; preheat oven to 375°F (190°C).
  9. Brush the top with olive oil; bake for 25–30 minutes until golden brown.
  10. Cool slightly before slicing; serve warm.
