  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 2 tbsp flour
  • 1 tbsp fresh lemon juice
  • 1½ tsp ground cinnamon
  • ¼ tsp freshly grated nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (for crumb topping)
  • ½ cup packed brown sugar (for crumb topping)
  • ¼ cup granulated sugar (for crumb topping)
  • ½ cup (1 stick) cold unsalted butter, cubed
  • ½ tsp cinnamon (for crumb topping)
  • Pinch of salt (for crumb topping)
  • Optional: ¼ cup chopped pecans or old-fashioned oats

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the pie shell on a baking sheet to catch any spills.
  3. Toss sliced apples with sugars, lemon juice, cinnamon, nutmeg, salt, and vanilla in a large bowl; let sit for 10–15 minutes.
  4. For the crumb topping, mix flour, both sugars, cinnamon, and salt; cut in cold butter until small pea-sized crumbs form.
