  • 1 cup uncooked rice
  • 2 cups water or chicken broth
  • 4 cups diced onions and bell peppers
  • 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles
  • Cajun seasoning
  • 1 cup shredded cheddar cheese
  • Olive oil

Instructions

  1. In a saucepan, bring water (or broth), rice, and salt to a boil. Cover, reduce heat, and simmer for 14 minutes. Remove from heat.
  2. Cut chicken into bite-sized cubes and season with Cajun seasoning.
  3. Heat olive oil in a large pot over medium-high heat. Brown chicken on both sides; set aside.
  4. In the same pot, sauté onions and bell peppers until softened.
