  • 15-ounce whole milk ricotta cheese
  • 12 ounces mini chocolate chips
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • ¾ cup powdered sugar

Instructions

  1. Freeze the pound cake for about 30 minutes for easier slicing.
  2. Slice the pound cake into uniform ¼-inch pieces.
  3. For the ganache, heat 1 cup of heavy cream in a microwave-safe bowl until hot. Stir in 1 cup of chocolate chips until smooth and chill.
  4. In a medium bowl, mix ricotta cheese, powdered sugar, and vanilla extract until smooth. Fold in half of the whipped cream and then fold in remaining whipped cream.
  5. Layer sliced pound cake in an 8×8-inch pan, spread half the filling on top, repeat with another layer of cake and filling.
  6. Pour chilled ganache over the top and garnish with remaining chocolate chips.
  7. Cover and chill for at least 3 hours or overnight before serving.
