  • 1 lb chicken tenders
  • 1 head broccoli
  • 2 bell peppers
  • 1 yellow onion
  • 1/4 cup + 2 tbsp soy sauce
  • 3 tbsp olive oil
  • 2 1/2 tbsp honey
  • 1 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • pepper (to taste)
  • salt (to taste)

Instructions

  1. Chop the broccoli into bite-sized pieces and slice the bell peppers and onion.
  2. Cut the chicken tenders into strips for even cooking.
  3. Heat 1 tablespoon of olive oil in a pan over medium heat, add seasoned chicken strips, and cook until browned.
  4. In the same pan, add another 2 tablespoons of olive oil along with the chopped vegetables, garlic powder, ground ginger, salt, and pepper. Sauté for about 10 minutes until tender.
  5. Lower the heat and stir in soy sauce and honey; let simmer for a few minutes.
  6. Add the cooked chicken back to the pan, mix well, and simmer for another five minutes.
  7. Serve over rice or quinoa for a wholesome meal.
