  • 2 cups whole milk
  • 1/2 cup sugar (plus 1/4 cup for whipped cream)
  • 5 tbsp cornstarch
  • 2 tbsp butter
  • 1 cup flaked sweetened coconut (divided)
  • 2 cups whipping cream
  • 1.5 tsp vanilla extract
  • 1 tbsp coconut extract
  • Pinch of salt

Instructions

  1. Prepare the cake according to package instructions or your favorite recipe and cool completely before cubing.
  2. In a saucepan, whisk together milk, sugar, cornstarch, and salt over medium heat until thickened. Remove from heat and stir in butter, vanilla, and flaked coconut; let cool slightly.
  3. In a mixing bowl, beat whipping cream with sugar until soft peaks form. Add coconut extract and continue beating until stiff peaks form.
  4. In a large glass bowl or trifle dish, layer half of the cake cubes, followed by half of the pudding and half of the whipped cream. Repeat layers with remaining ingredients.
  5. Cover and refrigerate for at least an hour before serving.
