  • 50 grams sourdough starter (fed and bubbly)
  • 375 grams water
  • 50 grams brown sugar
  • 120 grams chocolate chips

Instructions

  1. Feed your sourdough starter 4–8 hours before starting.
  2. In a bowl, whisk together flour, cocoa powder, and salt.
  3. Make a well in the dry ingredients, then add sourdough starter, water, and brown sugar. Mix until combined.
  4. Shape the dough into a ball and let it rest for one hour.
  5. Incorporate chocolate chips and perform three sets of stretch and folds every thirty minutes.
  6. Cover and ferment overnight until doubled in size (7-12 hours).
  7. Shape the dough and place it in a banneton or bowl for cold fermentation (1–3 hours).
  8. Preheat your oven to 425°F, score the top of the loaf, and bake in a Dutch oven for a total of 45–50 minutes.
  9. Cool for at least an hour before slicing.
