  • 1 and 1/2 teaspoons ground cinnamon
  • 1 and 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 and 1/2 cups canned pumpkin puree
  • 2 large eggs
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 425°F (218°C). Prepare a muffin pan with nonstick spray or liner.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, ginger, and salt.
  3. In another bowl, mix the oil, granulated sugar, brown sugar, pumpkin puree, eggs, and milk until combined.
  4. Fold the wet mixture into the dry ingredients gently until just combined; do not overmix.
  5. Fill muffin liners to the top with batter.
  6. Bake for 5 minutes at 425°F; lower the temperature to 350°F (177°C) for another 16–17 minutes until a toothpick comes out clean.
  7. Let cool in the pan for about 5 minutes before serving.
